Scale an ingredient
Scale each ingredient separately. Pan space, cooking time and food safety do not scale automatically.
A usable recipe tells you what the ingredients are like when they enter the pan and what you should observe before moving on.
When changing four servings to six, scale ingredient weights first. Then check the pan: a larger batch may need two cooking rounds rather than a longer wait in a crowded pan.
Keep a short note of the equipment, batch size and the change that worked.
